February 28, 2010We all had very busy days today, in separate directions. David was toiling away at the bank, I was at the Delray Beach tennis tournament (but only after I finished up a big accounting project) and the kids ventured to South Beach. So we all ended up back at the house a little later than usual and with a little less energy than usual.
I had planned on making lamb burgers with a goat cheese and kalamata olive spread along with a salad of fennel, feta, lemon and dill. I started preparations very late, not until about 8 pm. And since I was pooped out, I guess I was moving very slowly. The burgers came out better than I had hoped, they were beautiful! They were big, juicy and with just the right amount of char. The cheese spread for the burgers was creamy and melty and complimented the burgers perfectly. The smell that filled the kitchen was unbelievable!
The salad was magnificent; cool, crisp, lemony and salty from the feta with that fabulous hint of licorice from the fennel. The fennel fronds look so much like dill, your taste buds will be yelling at you if you don’t give ’em what they’re looking for, which is dill! I think the dill just raises all the tastes to a higher level. This is truly a wonderful salad. I serve it often.
Even though I was way behind schedule, I didn’t want to miss out on the opportunity to photograph the results, so David and I went at it. Again, I guess I was moving slower than usual due to fatigue. We finished up, and I had just plated everything when the kids came out and said they had to leave. They had a date with some friends for a movie and they had waited as long as they absolutely could. They didn’t want to interrupt my photo session because they know how passionate I am about this project. OOOHHH, I felt just terrible!
I said, “here, take them with you, eat them in the car”. Barbara didn’t want to, but I could see her hungry young man swooning, hoping she would say yes. So I said, “all right, I’ll save them and re-heat them when you return, but they won’t be as good as they are right now. So, each of you, take a big bite right now before you leave”. Well Barbara had a dainty bite, but that hungry young man took a wolf bite and his eyes lit up and he was nodding his head up and down and he was actually grinning with his mouth full. He managed to get two more good sized bites in before Barbara dragged him off. Ahh, the shame of it. What was I thinking.
I’ll tell you what I was thinking: I was thinking that these were the most beautiful burgers I had ever seen and I wanted pictures of them while the steam was still rising and the juices were still pooling on the plate. That’s what I was thinking. Anyway, David and I ate all of our allotted feast and saved the rest for the kids. They ate when they got home and said it was good, but both agreed they were not as good as those few bites when the food was at its peak.
Try this menu any time of the year. It is glorious in the way it smells, looks and the taste is to swoon for.

Thursday, February 25, 2010 Rosemary Citrus Chops
February 26, 2010Need I say more? Feast your taste buds on these beauties!
Wow! I hate to brag, but these pork chops were as tasty as they were gorgeous! Do you see them? I’m not kidding, they were amazing. I marinated them in a sweet tart combo of molasses, balsamic vinegar, orange juice, bourbon, olive oil and fresh rosemary.
Those crazy in “loaf” kids had a tough day today and they needed something amazing for dinner. We didn’t eat until 9 pm, but we had our reasons. I know, I know, we’re not supposed to eat so late, but sometimes it can’t be helped.
Do I know how to cheer up my girl? Of course I do. I made her most favorite dish, Insalata Caprese. I make it family style, which I think is genius. You must try it. It is the famous Italian salad traditionally served as fresh mozzarella on a thick tomato slice with fresh basil and drizzled with olive oil. I chop up the mozzarella, tomato and basil and add small black olives. I drizzle the olive oil and sprinkle on salt and rice vinegar and give it a toss. Delish!

Tuesday, February 23, 2010 Lemony Shrimp Linguine & Arugula
February 23, 2010The kids had another great day. My daughter is home from McGill University with her young man who is also a McGillite. McGillite? Hey don’t get mad, just correct me, ok? This morning, well actually sort of the crack of noonish, I made them corned beef hash with poached eggs and toast from the Sunday leftovers. Really delish, I’ll post the recipe soon. It’s so nice to have a college boy around the house, he has an appetite that warms my heart!
Afterwards, they went off to see the alligators in the Everglades. The kids took the air boat ride from Holiday Park which is only twenty minutes from our home. After the boat ride they went to see the alligator wrestling at the same park.
They returned home with big appetites (as ordered) and I served up one of my favorite go-to meals for company; Lemony Shrimp with Linguine and Arugula. Easy, quick, yummy and good visual wowee factor. After dinner they went off to meet up with Barbara’s friends from her old high school band along with the band directors, fresh from a rehearsal. She wants to show off her young man, who plays the tuba, you know. I’m sure that’s worth bragging about.

Monday, February 22, 2010 Asian Loaf & Bok Choy
February 23, 2010What? Monday? Well, remember my daughter is home from school and she has her young man with her. Woo Hoo! I get to cook for company every day this week! Here are the two of them having fun with chop sticks before devouring my Sesame Loaf with sautéed Bok Choy and Ginger with Spicy Brown Rice.
When Barbara told her young man about my asian sesame loaf, the two of them giggled up a storm. Apparently, they have an ongoing joke about being in “loaf” with each other. I thought it was very funny, so I made the “loaf” dinner as soon as I could.

Sunday, February 21, 2010 Corned Beef Brisket
February 22, 2010My daughter arrived home from school this afternoon and she brought her young man with her. I’ve been so looking forward to meeting him. We’ve heard so much about him and he seems like a jewel. Of course my daughter has been bragging to him about the home cooking he could look forward to. Oooh, pressure! Just my luck, I pulled a muscle in my lower back/hip area so badly that I though I might have broken my hip. Saturday, I couldn’t move at all without extreme pain. How am I supposed to wow this kid when I can’t even boil water? Rest, ice, heat and massage and I’m moving a bit better on Sunday and decide I haven’t broken anything, just a bad pull.
What to make in my incapacitated state? I decide on corned beef brisket with red skin potatoes, carrots and cabbage, one pot style. Not exactly a meal for a special guest, but about all I can manage. It all comes out fine, but it is sort of a country, family style meal and not what I had wanted. And my pictures are not coming out either. I need to do something different with the photos. I’m new at this and I am already in a rut, style-wise on the photography. I am very disappointed!

Sunday, February 14, 2010 Caribbean Pulled Pork
February 15, 2010I know, I know, I made the pulled pork for the Super Bowl party a week ago. But, it went so fast I didn’t get any and my mother-in-law wasn’t there, so she didn’t get any either. So, I made it again, this time as a
main course along with coconut rice, a salad and store bought cheese cake with homemade raspberry sauce. I had bunches of grapes left over from the Super Bowl party and I wanted to find a way to use them. Did you know you can roast them with a little olive oil and salt and pepper? I thought that might be a bit to exotic for my guest. I came up with a salad of arugula, red grapes and blue cheese with a shallot 无码任你躁久久久久久老妇. It was delicious.
Mum hardly ever eats everything on her plate, but for this meal, there wasn’t a scrap left. She loved everything!

Super Bowl, 2010
February 10, 2010I needed crowd food that would still be WOW food for this party. I was expecting between 15 and 25 guests. Hmmmm… pork shoulder roast feeds a crowd and if I make it up as mini pulled pork sliders with mango salsa, it’ll say, WOW, not to mention, YUM! My good friend, Penny brought the fab mango salsa, because no one can make it better than she can. The pork sandwiches with the salsa were so good, it all went before I could get a single snap of it. I’m making it again this weekend so I can have some, but also, so I can take some pictures. You guys, you can’t believe how good this was! Unbelievable! Click Here For Recipe.
How about Chili? That’s a crowd pleaser, but I couldn’t make ordinary chili. I decided on a mole chili with unsweetened dark chocolate and a variety of heat; roasted poblano peppers, jalapenos, cayenne and chipotles. And while I was at it, I added a topping bar to kick up the wow factor.
I added a big batch of jerk wings done under the broiler, so they are crispy and not wet. As it turns out, instead of making the wings myself, I ordered a big batch from Wings Plus, the best damn wingers in South Florida! I order 50 Jerk and 50 Medium Hot, but all grilled.
And to make sure I went over the top, I decided to make Roasted Thai Shrimp with Asian Dipping sauce. I garnished it with roasted green onions and fresh cilantro. Ha! It’s so good it makes me laugh out loud! And Kenya, I know you’re looking for the recipe. Click here for the recipe.
I added some snacks to the menu; sugar glazed pecans, seasoned oyster crackers, bunches of grapes and Pepperidge Farm cookies.
When I host a party, I always like to have a signature cocktail. I serve beer, wine, juice and soda, but I like to have one featured beverage that I can make with or without alcohol. For this Super Bowl party, I wanted something that could be made on the lighter side so people could have more than one. I came up with a Pallini Limoncello and Perrier Spritzer with Mint Garnish. I served it in martini glasses to add to the festive feel of the cocktail. For the tea totalers, I used Lemon Perrier, a splash of simple syrup, mint and a lemon twist. Everyone else got a splash of Pallini Limoncello, instead of the simple syrup and no twist. This drink is absolutely delicious! So light, with a hint of sweet lemony yum.

Sunday, January 31, 2010 – Smoky Bourbon Pork Chops
February 1, 2010Bone-in, center-cut pork chops are the pork equivalent to a beef porterhouse steak. On one side of the bone is the ever so tender bestialityvideo另类灌满 and on the other side is the delicious sirloin. So, it’s like two steaks in one. When the bestialityvideo另类灌满 is removed, you are left with what is referred to as a T-bone steak. I bought the porterhouse version of the pork chop for added pizzazz and wow factor for a company meal.
I was looking for a marinade or glaze that would spiff up the pork chop enough for my Sunday dinner. I didn’t want a barbeque, my mother-in-law is not crazy about asian food, and I wasn’t in the mood for something frenchy (which is always a good way to dress up casual food). So, I came up with the idea for a bourbon marinade and further decided to make it citrusy with orange for balance and spicy and smoky for flavor and kick. I used smoked paprika and chipotle hot sauce to get the smoky flavor.
I decided to serve the pork chop with individual spinach souffles that are made with feta cheese and eggs. They taste exactly like the filling in the greek pastry, spanikopita. They’re more waist friendly because there’s no pastry or crust. They are really easy to make but look so fancy and the taste is fantastic – even for most vegetable haters (like my darling mother-in-law). I added a pasta side dish to round out the menu. I made whole wheat rotini (I love the Gia Russa brand). After I cooked the pasta, I stirred in a little pesto, some crushed italian tomatoes, some chopped roasted red pepper and shaved parmigiano reggiano. I topped it off with a little chopped fresh basil from my garden. It looked pretty but was simple enough to be paired with the other items on the menu. And it was robust enough to stand up to the pork chop.
We are all watching our waist lines this time of the year, so for dessert I made small parfaits of orange scented mouse with a sugar free chocolate syrup drizzle. I served them in a fancy crystal martini glass and I don’t think anyone felt deprived.
