Bok Choy with Ginger and Spice
Bok Choy is so easy and so fast, it can be made at the last minute.
Ingredients:
1 large bunch bok choy, washed thoroughly and chopped
1 tablespoon peanut or vegetable oil
1 teaspoon toasted sesame oil
1 inch fresh ginger, peeled and minced
4 cloves garlic, minced
red pepper flakes to taste
1 teaspoon soy sauce
Directions:
After thoroughly washing bok choy, chop the white stem in large bite size pieces. It will shrink when cooked. Rough chop the green tops and reserve until the end. They cook very fast and shrink a lot.
Add oils to a large frying pan and heat on medium high. Add ginger, garlic and red pepper and saute until soft, about 4 minutes. Add the white part of the bok choy and saute for another 3 minutes. This can be set aside until you are ready to serve. When the rest of your meal is ready, re-heat the white parts of the bok choy and add the greens. Saute only until heated through and wilted. Add the soy sauce, toss and serve. Delicious!
